I think they'll spread it across multiple realms, much like GOT, with Numenor being one alongside the Elven regions on Middle-earth.
I doubt Elendil will be a focal point from day 1, as he wasn't born until the final few centuries of the SA. They've got 3000+ years to play with before then. Maybe the entire series will end with the Last Alliance?

Remember, these numenorians lived for centuries themselves. I think... (spoilered for obvious reasons) ...they'll begin around the SA1200 mark, which is when an incognito Sauron began deceiving the Noldorian elves in Middle-earth, and Gil-Galad (who led the elves during the Last Alliance) immediately distrusts him.
Celeborn and Galadriel move to Lothlorien circa 1350.
Celebrimbor begins forging the rings of power 1500.
Sauron is revealed as he completes Barad-dur 1600.
War with elves begins 1693 and the three elven rings are hidden.
Elrond joins Gil-Galad 1695 and establishes Rivendell.
Ringwraiths appear 2221.
Elendil is born 3119.
Isildur born 3209.
Sauron taken prisoner in Numenor 3262. This could be an alternative start point, based on your hunch.
He corrupts Numenor's king the same year.
Numenor ruined. World is changed forever and made round 3319.
The war of the Last Alliance 3428-3441.

The characters in this era are either immortal elves or men that live for hundreds of years. So they're going to have to approach this show in a totally unique way.
I have no idea how that will work.
