The Marvel Comics adaptation of the Droids cartoon did something clever that could be used for a series like this. They retold the story of the original Star Wars, but entirely from the perspective of Artoo and Threepio. There are loads of times throughout the Original Trilogy in which one or both of them are off on their own while the rest of the cast are getting into or out of trouble.
