I've not seen very many Peter Fonda movies. Of the few I have seen that come to mind, they were all pretty bad. This was not due to any fault on his part, mind you. Casting Fonda as the devil in Ghost Rider was good casting, and he was good in the role. It was still a shit movie. There's some other movie I saw at an Alamo Drafthouse AGFA Secret Screening called Race with the Devil starring Fonda and Warren Oates. It was about some folks on a road trip in an RV who wind up being chased across Texas by satanists. He was also in the craptacular Escape From L.A.
Easy Rider and Dirty Mary, Crazy Larry are both films of his that I've been meaning to watch for years. Just haven't gotten around to it. I have seen 3:10 to Yuma, but I don't really remember it at all.
