There's two ways you can do this.
The first way, and the closest to the old board, is to click on the gear icon to the right and choose "Select Post". Do this for every post you want quoted, and then click the quote button.
The other way is to simply navigate to the Reply page of a thread, and then scroll down below and it will show you all the most recent posts. You can quote each one you want, or if you forgot one you can add it.

At some point we'll have to compile a "Forum Tips" guide thread.
Having said that, if there's something you're not sure about or that you wish the forum had, just ask. It might already be here, or can be added.
