If you only watch one South Park episode, I always vote Good Times with Weapons. All of the show's strengths are played up in that one episode.

South Park is a pretty topical show, I'm not sure what going back and watching the back catalog at this would be like at this point. Not sure I'd recommend anyone jump in with the new stuff either without background. Kind of a catch-22 I'd never recommend watching from the beginning. The first two seasons of South Park have a certain desperation to be as rude and crude as possible, sometimes with a parody thrown in. Some of them are kind of stupid-funny, but last time I watched that early I thought to myself "The only reason I like any of these is because I was at a certain age when I first saw them." By season three they were like "This is popular/was in the news last week. Let's make fun of it." And in the movie they were very into making fun of the type of broadway musical that Disney films were. Nowadays they produce so fast that there's no way they aren't making fun of what's trendy or news cycling. It's kind of fun going through the series and spotting "Oh, that was going on when this episode was being made!" Though some of them don't age well. I'm pretty sure even Matt and Trey admit that they're regretful of some of the opinions they shared over the years with hindsight.

I always gravitated to the episodes where the kids aren't portrayed as too grown up and they're dealing with the absurdities of life through the lens of a 9-year-old. A lot of the titles are escaping me, but like the episode where Bebe starts developing breasts and the boys just start realizing "Bebe is like really cool all of a sudden" or the episode where the kids debate whether or not the town flag is racist. And also, Casa Bonita is just classic. That's one of the reasons why I champion Good Times with Weapons as hard as I do, because it's about the imaginations of children going wild to the point where there are consequences to their carelessness. And then there is that punctuating social commentary of "sex is worse than violence" that ends the episode on a perfect note.
Outside of those, I like the Raiders of the Lost Ark Special Edition episode. I like the one where Randy says the N-word on Wheel of Fortune. Cartman Joins NAMBLA is pure WTF hilarity.
The show has a lot of great episodes under its belt.

the episode where Bebe starts developing breasts and the boys just start realizing "Bebe is like really cool all of a sudden" I think Wendy gets breast implants in that one, so it still portrays them as being grown-up-ish. Similar is the episode in which Timmy gets random boners and is afraid to go up on stage to make a presentation in fear of popping a boner in front of everyone so he has sex with a prostitute to get rid of the boners. Or the episode with Paris Hilton in which all the girls act like a slut to emulate her and Garrison's boyfriend ends up sticking Paris Hilton up his butt. This show isn't Rugrats.

Shit, how could I forget the Lord of the Rings episode, where Randy accidentally switched the Fellowship of the Ring with Backdoor Sluts Vol. 9, and the kids go on a "quest" to return it to the video store, while Butters has gone full Gollem for it.
That joke where they're all dudded up in Lord of the Rings garb and they pass those kids who are playing Harry Potter, and Cartman just shouts "HA! FAGS!" makes me laugh every time.

I used to watch South Park all the time, but haven't seen it in ages. I've no idea who PC Principal is. He replaced the principal around season 18, I think. He's basically an "SJW" embodiment, where he's offended by everything and jumps in to yell at you if you say something non-PC. I found him kind of tiresome after a single episode, but I guess they're keeping him.
